A few months ago, I visited Maxi, where Miriam—whom I’ve also known for a long time—was visiting. As always, Maxi offered to make me a drink, and as usual, I declined. I had been drinking one specific green tea for years, believed it was the absolute best available, and was convinced nothing could top it.
Miriam mentioned she had a special green tea that would change my mind. I didn't hide my skepticism—I made jokes, expecting the usual marketing hype. Moreover, I was used to doing everything fast: pouring boiling water into the tea and running back to work or to do other things. I was a bit impatient, and I teased her about how long and meticulously she was preparing it.
But when Miriam patiently served the Sencha prepared according to her strict protocol—maintaining an exact 80°C (175°F) water temperature and precise steep time—I was astonished.

🍵 The Precision Sencha Brewing Protocol
Water Temperature: 80°C–85°C (175°F–185°F). Never use boiling water—it scorches the delicate leaf, releasing harsh tannins that block cellular response.
Tea-to-Water Ratio: 2g of leaf per 220ml of water (~1 tsp per cup).
Steep Time: 45–60 seconds for high-grade Sencha (up to 2 minutes for standard green teas).
Vessel Prep: Pre-warm the teapot or cup with hot water, then discard it to maintain thermal stability.
Crucial Step: Remove the tea leaves completely after steeping. Over-steeping causes tannins to continuously release, dulling the subtle energetic effect.
Re-steeping: High-quality Sencha supports 2–3 infusions. Add 10–15 seconds to each subsequent steep. No sweeteners needed.
